Chocolate Mint Protein Cookies

As promised yesterday . . . I’m sharing the recipe for Gluten Free Chocolate Mint Protein Cookies. 🙂

IMG_3940Here’s what you’ll need:

  • 2 1/2 Cups Powdered Sugar
  • 1 Cup Cocoa Powder
  • 1 TBS Corn Starch
  • 1/4 tsp Himalayan Pink Salt
  • 3 Large Eggs
  • 1 TBS Vanilla
  • 1 Cup Chocolate Chips
  • 2 Chocolate Mint NoGii Bars 
  1. Preheat your oven to 350°F
  2. Mix Powdered Sugar, Cocoa Powder, Corn Starch, and Salt until well blended.
  3. Chop up your NoGii bars (I chopped them into around 16 squares, but they don’t need to be perfect.) Then, throw them into a food processor, and grind until they look like this:     IMG_3933
  4. Add the ground NoGii bars into your dry ingredients, and mix well.
  5. Whisk 2 egg whites and your vanilla for 30 seconds. Add in one whole egg, and whisk another 20 seconds.
  6. Add wet ingredients to dry ingredients. Mixture will be quite stiff, but keep mixing!
  7. Add in your chocolate chips, and mix until combined.
  8. Grab two cookie sheets, and line them with parchment paper.
  9. Drop by rounded spoonful on the cookie sheets. You should end up with twenty-four medium cookies (twelve on each sheet.)
  10. Bake for 14 – 16 minutes, switching racks halfway through.
  11. Let cool on cookie sheet for a minute before transferring to a wire cooling rack.
  12. Allow to cool for two more minutes before serving. Enjoy!!

IMG_3935Two cookies will have six grams of protein, making them perfect for a quick jolt of protein mid-afternoon!

NoGii . . . a review!

After my post on protein popsicles, nogii offered to send me some products to review, which I gladly agreed to! Here’s what they sent me: IMG_3829

Onto the reviews . . . 🙂

I’m going to group the review by the type of bar today:

Paleo Bars:

These remind me of Larabars. Minimal ingredients, great flavor, and fantastic for on the go. I’ve had them for breakfast a couple times this week, and they’re all super tasty! My favorite was the Nuts About Berries. It tastes awesome, and the flavors are really well balanced!

Protein D’Lites:

This was awesome. They make a fantastic snack, and are perfect for if you need a quick jolt of protein. Plus, they’re really tasty!

High Protein Bars:

These are awesome as meal substitutes. In fact, I went to Rome yesterday and had one for lunch while we were running errands and picking strawberries. The Chocolate Coconut one is tastiest in my opinion, but the Chocolate Mint one is fantastic too. Especially, when made into Chocolate Mint Protein cookies . . . like this:

Overall:

All the nogii bars I got to try were really tasty, and I would definitely purchase them to have on hand for a quick breakfast or snack!

Chocolate Covered Strawberry Protein Pops

At the GFAF Expo the NoGii booth was handing out protein powder samples, and instead of just making a protein shake, I decided to change it up and make protein popsicles! 🙂

IMG_3629Here’s what I did:
In the blender, I combined 10 medium sized fresh strawberries (halved, with crowns and stems removed) with one container of yogurt, (I used Oh My Yog!) a 1/2 cup of vanilla almond milk, and the 22g sample packet of the protein powder (use one scoop if using the container of mix) until mixture was thick, with a few chunks of strawberries remaining. Then, I poured the mixture into popsicle molds. There was some left over so I put it in a cup, and froze it alone. It wasn’t all that pretty, so here are the popsicles before freezing:IMG_3630

 Once in the molds, freeze for six to twelve hours, or until frozen solid. Run your popsicle mold under warm water until they separate from the molds, and you get something a bit like this:

Then, the popsicles are ready to enjoy! 🙂
