Summer = Tomatoes . . . right?

In case you’ve missed it, I have a minor obsession with fresh produce, and while it may just be me . . . nothing says summer quite like a Tomato Sandwich because sometimes the simpler the meal the better. Anyways, if you’ve never made a tomato sandwich, here’s what you do:

Take a fresh tomato, and slice it thinly:

Then, sprinkle your tomato with salt and pepper.

Next, toast two slices of your favorite Gluten Free Bread (I used Canyon Bakehouse), then spread a thin layer of Miracle Whip on your bread, and layer three or four tomato slices inside. Once you cut your sandwich in half, it should look something like this:

Caprese is my new culinary BFF!

Do any of y’all go through phases of ABSOLUTELY loving a certain flavor combination? Well, that’s been my relationship with¬†caprese¬†recently. I’m totally in love with everything about it. The fresh summery flavors just seem like a fabulous way to celebrate the arrival of spring! ūüėČ Here are a couple of ways I have made it over the past week or so . . .

1) The Classic Caprese Salad
In my opinion, a classic caprese salad is the embodiment of simplicity at its very best. Fresh tomatoes with mozzarella, fresh basil, and balsamic vinegar (or vinaigrette dependent on what you have on hand) makes a simply delicious meal.

Now, if you feel like switching it up, you can take this flavor combination a step further with  . . .

2) Caprese Grilled Cheese!
On days you feel like kicking your caprese up a notch, this sandwich is for you. Made of Canyon Bakehouse 7 Grain Bread with Cream Cheese (because you need something to hold it all together), Sliced Tomatoes, Mozzarella, Fresh Basil, and some Balsamic Vinaigrette grilled on a med/hot stove until the cheese is melty. The freshness of the tomato and basil combined with the creaminess of the cheeses, and the crispiness of the bread creates an absolutely delicious sandwich.

Grown Up Grilled Cheese

You¬†could¬†spend the rest of your life eating gluten free white bread slathered in margarine with slices of American cheese in between. You could do that if nothing else were available . . . But that’s gross whether you¬†can¬†eat gluten or not, and you can do SO much better than that — like the awesome sandwich my sister came up with that I am sharing with y’all ¬† today!

Ingredients:

Set up is simple. Butter two slices of bread,  put the cream cheese on the other sides of the bread. After that, put a thick slice of swiss on both of the cream cheese sides of the sandwich. Add a spoonful of the tomatoes in the center. Cook your grilled cheese on a stovetop in a pan on medium low heat until the cheese is melty, and the bread is golden brown. If you prefer, put it on a griddle or electric skillet at 350 degrees until golden brown. Place on a plate cut diagonally, or however you prefer your sandwiches cut . . . and enjoy!

Give this sandwich a try! I’m pretty sure you’ll like it.

What’s y’all’s favorite grilled cheese combination? Let me know in the comments!

Hope you have had a tremendous Thursday!
Love,
Olivia
