BAM Smoothie Recipe!

So, this smoothie’s name is actually quite uncreative as it stems solely from the initials of the first three ingredients, but it’s tasty nonetheless.

Here’s what you need:

  • 1 REALLY ripe Banana
  • 1 ripe Avocado
  • 1/2 cup frozen Mango chunks
  • enough vanilla almond milk to keep it smooth and creamy (about 3/4 cup)

Here’s what you do:

  • Throw the first three ingredients into a blender with a splash of almond milk.
  • Blend until everything is mashed.
  • Add in the rest of your almond milk, and blend until smooth.
  • Pour into a glass (or mason jar) add a milkshake straw, and enjoy!

Summer = Tomatoes . . . right?

In case you’ve missed it, I have a minor obsession with fresh produce, and while it may just be me . . . nothing says summer quite like a Tomato Sandwich because sometimes the simpler the meal the better. Anyways, if you’ve never made a tomato sandwich, here’s what you do:

Take a fresh tomato, and slice it thinly:

Then, sprinkle your tomato with salt and pepper.

Next, toast two slices of your favorite Gluten Free Bread (I used Canyon Bakehouse), then spread a thin layer of Miracle Whip on your bread, and layer three or four tomato slices inside. Once you cut your sandwich in half, it should look something like this:

Grocery Shopping is hard y’all!

So, I went shopping today, and went to Aldi, Sam’s Club, a local farmer’s market (where we got all the pretty produce you’ll see in a second), and Kroger (where I bought WAY too much yogurt,because I’m an addict) but at least it was a good deal, right? See:

We got Patty Pan Squash, Carrots, Beets, Heirloom Tomatoes, Blackberries, Basil, Zucchini, Peaches, and Kale today at the Farmer’s Market because it’s summer, and there are so many more opportunities to buy local produce!

Now I don’t know about y’all, but without fail . . . I’ll buy all this great food, and stock my pantry, fridge, and freezer. But then, I’ll find myself at a loss as to what to eat for dinner. Which is why I grabbed this too:

I grew something!!

I have had a historically hard time growing anything. My oregano plant a couple years back shriveled up and died almost immediately after arriving at my home, and my tomato plant didn’t do much better, but magically . . . the cherry tomato plant I picked out at the store this year worked. I mean, IT ACTUALLY GREW tomatoes. I mean, even Ava’s shocked:

And y’all . . . it’s STILL growing tomatoes! I’m shocked, but not about to complain!

Happy Friday!

Here at the Livie’s Gone Gluten Free Casa we have Frankie Fridays, and make hot dogs for dinner. Simple? Yes. But, it’s also sweetly nostalgic of childhood church cookouts. And what’s a good frankfurter without a bun, right?

And guess what . . . I’ve found the perfect accompaniment to Frankie Friday! 😉

IMG_4295The Udi’s Hot Dog Buns are awesome, and if you steam them for 30 seconds or so, they turn out perfectly soft! They’d be perfect for any summer barbecue, or even a Frankie Friday! 😉

As usual, this recommendation is solely my opinion, I have nothing to do with Udi’s and purchased the product with my own money.

Quick and Easy Gluten Free Dinner Idea

IMG_4341Want dinner on the table in about 15 minutes? Well, grab a pack of LiveGfree Cheese Ravioli from Aldi (they’re on sale to clear out extra stock from the special buy) and follow the instructions, while your water is boiling, pour a jar of pasta sauce (I used Classico) into a pan to warm. About five minutes into cooking your raviolis, throw a bag of steamable asparagus (I used Season’s Choice from Aldi) into the microwave and cook according to directions. Serve your ravioli with your sauce, and a side of asparagus. It turns out rather pretty. Terrific Things Tuesday . . . Texas Crafts Edition

Y’all know how much I adore my home state . . .  because, as you may know, Texas IS the greatest state in the union! 😉 In honor of that, I thought I’d share some fun Texas crafts I’ve found recently!

1) Deep in the Heart of Texas Canvas!

If your calligraphy is awesome, you may want to try this project. For those of us with not fantastic calligraphy skills . . . buy it from Colors on Canvas on Etsy!

2) Button Art!!

Crab Salad (a recipe!)

Today I’m going to share a recipe with y’all for Crab Salad!photo 2-3Typically, any recipe with imitation crab is totally off limits because imitation crab regularly has wheat or other glutinous fillers, but there is a company that makes Gluten Free imitation crab which is what I used to make this recipe!

This recipe is perfect for a spread with crackers (I served it with Aldi LiveGfree Crackers) like you see below, or on a sandwich like you see above which is composed of half of an Udi’s Plain Bagel, Crab Dip, 1 Sliced Cherry Tomato, 4 rings of Banana Pepper, and some Kale!

To make your Crab Salad, you will need:

  • 6 ounces Gluten Free imitation crab, chopped (I pulsed it in my food processor a few times.)
  • 8 ounces (1 brick) cream cheese, softened
  • 1 teaspoon onion powder

Throw everything in your food processor, and pulse until combined. Transfer into a bowl, and chill for about two hours. Serve with crackers, fresh veggies, or use as a spread!
