Caprese is my new culinary BFF!

Do any of y’all go through phases of ABSOLUTELY loving a certain flavor combination? Well, that’s been my relationship with caprese recently. I’m totally in love with everything about it. The fresh summery flavors just seem like a fabulous way to celebrate the arrival of spring! 😉 Here are a couple of ways I have made it over the past week or so . . .

1) The Classic Caprese Salad
In my opinion, a classic caprese salad is the embodiment of simplicity at its very best. Fresh tomatoes with mozzarella, fresh basil, and balsamic vinegar (or vinaigrette dependent on what you have on hand) makes a simply delicious meal.

Now, if you feel like switching it up, you can take this flavor combination a step further with  . . .

2) Caprese Grilled Cheese!
On days you feel like kicking your caprese up a notch, this sandwich is for you. Made of Canyon Bakehouse 7 Grain Bread with Cream Cheese (because you need something to hold it all together), Sliced Tomatoes, Mozzarella, Fresh Basil, and some Balsamic Vinaigrette grilled on a med/hot stove until the cheese is melty. The freshness of the tomato and basil combined with the creaminess of the cheeses, and the crispiness of the bread creates an absolutely delicious sandwich.

Gluten Free at School

Okay y’all! Today we’re going to talk about eating Gluten Free at school.

Now, I’m going to tell y’all straight up that your best option is packing your own lunch. The best way to avoid any cross-contamination is by fixing your food in a safe kitchen, which I’m assuming you have at home. I’m just gonna give y’all some general ideas on what to pack, as well as some suggestions/tips I’ve stumbled upon along the way. 😉

  1. Get cool lunch containers. I love these from Sistema, and these from OXO
  2. Pack everything the night before. This way you aren’t rushing around in the morning going, “Where in the world are my veggie chips!?!?!?”
  3. Find things that hold up well. 🙂  Make quesadillas with corn tortillas and some chicken or ground beef, bell peppers, hummus, and cucumbers. All have held up well for me in a chilled lunch box.
  4. Make simple foods or take leftovers. The goal is not to create more stress, but less.

So, let’s talk about some ideas! 😉

 Okay, In the picture above I’ve packed everything in a Sistema Klip It Lunch Cube, and I have:

  • A Quesadilla (2 Corn tortillas, with avocado, turkey, and cheddar cheese)
  • A chunk of watermelon
  • A few grapes
  • Red, Yellow, and Orange Bell Peppers chopped into strips.
  • Cucumber Disks
  • Sea Salt Veggie Chips and Roasted Red Pepper Hummus in the cute midget Tupperware container.

This is just a basic set up. You can do all kinds of fun stuff with this container, and I find it really easy to pack stuff in these.

If you wanted to switch it up, you could always pack a salad. I’m not talking iceberg and a shredded carrot here. Nope. That’s not how I do salad. So, I’ve got an idea for y’all below. By the way, it’s on a plate, but could easily be put into a container. Just keep in mind that the dressing would keep better during the school day on the side.

Okie dokie, in the picture above we have a salad of romaine and spinach with dried cranberries, mandarin oranges, cherry tomatoes, cucumber, grilled chicken breast, and edamame — topped with a little poppyseed dressing. Just put your dressing in a little cup. These containers would be PERFECT.

So what’s the point? The point is putting together Gluten Free lunches isn’t terribly hard. It just takes some planning.
